We treat our house made Triticale spirit as an ingredient on its own rather than a blank slate to build upon. This adds a rich mouth feel and a slight Sichuan pepper finish to a balanced dry botanical profile.
HOW IT'S DONE
Our botanical bill is made up of herbs and spices from all over the world, Juniper (Serbia), Grains of Paradise (West Africa), Coriander Seed, Cassia Bark and Angelica root (China), Orris Root (Morocco), Liquorice Root (Egypt), Tailed Pepper (Indonesia), Cardamom (Guatemala) Australian Almonds, Harvey (WA) grown Lemon and Navel Orange all sing in unison with our house made 100% Western Australian Triticale base spirit.
Our Triticale spirit and water is added to our pot still, rather than boiling our carefully selected botanicals we place all our herbs and spices in a chamber that sits atop the still boiler, the alcohol vapour then passes through the chamber collecting the flavour and character of the ingredients resulting in a bright, fresh and aromatic Dry Gin. Non chill filtered and bottled by hand.
We use only all-natural ingredients in our Dry Gin so you know it’s the real thing. Starting with top quality base grain ensures a top quality spirit. Made with integrity, honesty and complete transparency.
